Nova Resende is a small municipality located in southeastern Brazil. Although Brazil is the world’s largest producer of Arabica coffees and many farms are large and mechanized, smaller co-operative growers still operate. These producers still hand pick and sort, ensuring accurate selecting of ripe and undamaged coffee cherries.
This coffee is honey processed which means that some of the fruit is allowed to remain on the coffee beans during the drying process; this imparts floral and sweet notes in the final brew.
